Coconut Energy Bites

 A quick little snack for the afternoon

½ cup packed soft medjool pitted dates ( I chop the dates before processing them)

1 cup   unsweetened finely shredded coconut ( more for rolling if desired)

1 cup packed rolled oats (I use bob’s red mill)

½ cup natural peanut butter

2 T hemp seed

1 T ground flax

1 T. Frozen Ocean Apiaries honey

⅓ cup water

½ c of  dark chocolate chips chopped (optional)

Directions:

In a food processor, process the dates, coconut, oats for about a minute until it is finely ground.  Add the peanut butter, hemp, flax, honey and water.  Process until the dough holds together. 

Roll into 16-18 balls. Roll the balls in coconut if desired.  Freeze for at least ½ hour. Then store in an airtight container in the fridge for 4 days or in the freezer for 2 months.
